When we talk about Indian cuisine, most of the main course involves some kind of curry dish that helps you take a bite of Indian bread such as Naan, Chapati or Roti. Thus, becomes the need for a good gravy, which not only makes a dish delicious but when it's gone wrong, it can make the dish go bad as well. Beyond being a luscious accompaniment, gravy serves as a unifying element, melding diverse spices and flavours into a harmonious blend.
Its importance lies in creating a sensorial journey, where each mouthful carries the essence of aromatic spices, creating a symphony of tastes that defines the depth and complexity of Indian culinary traditions.

But what if we tell you that there is a gravy that can help you make not just 1 or 2 but more than 50 dishes? Recently, MasterChef Pankaj Bhadauria shared the recipe for one such secret gravy, which can be prepared very easily at home. Calling it a ‘Magic Gravy’, it is a recipe that can be followed to make both veg and non-veg dishes. Whether you want to make Chole, Kofta, Aloo Matar or any desi dish, this gravy will make it even more delicious. Here is its recipe…
Ingredients required
4 large onions
8 large red tomatoes
4 inch ginger
6-8 Green chillis
1 tbsp garlic paste
2 tbsp red chilli powder
2 tbsp coriander powder
1 tsp turmeric powder
2 tbsp garam masala powder
1 tsp celery
1 tsp cumin
2 inches cinnamon
3 bay leaf
6 Green cardamom
8 cloves
15 Cashew
1 tsp salt
Half cup oil
Method
- First of all, finely chop the onion, green chilies, and ginger. Then wash the tomatoes and take out the ground spices in a bowl.
- Then add one cup of water and mix well. Meanwhile, heat oil in a pan, add all the spices, and cook on low flame.
- Now add salt and let the paste boil. Add a finely chopped onion to it and fry on low flame until it turns light in colour.
- Add chopped ginger and chilli. Add the spice paste and cook until oil comes over the gravy.
- Now add chopped tomatoes to it and cook until the tomatoes become pulpy. After adding tomatoes the color of the gravy will become dark.
- Now add cashew paste and mix well. Now use it to make vegetables. You can also make it by adding vegetables to it.
Hacks to make it better
- To reduce the amount of water in gravy, we can add some ingredients like potatoes, flour, and vegetables.
- You can also add cashew paste to the gravy. This will not only thicken your gravy but will also make it more tasty.
- You can use curd and fresh cream to make a thick gravy.
- Along with onion and tomato, you can also add peanuts to the gravy.
